Ingredients:

  • 2 lbs carrots, peeled and cut into 1-inch pieces
  • 3 tbsp WOAHONEY Wild Organic Honey 
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp cinnamon
  • 1/4 tsp cayenne pepper
  • 1 tsp salt
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp sliced almonds

Instructions:

  1. Preheat oven to 400°F. Line a baking sheet with foil or parchment paper.
  2. In a large bowl, toss together the carrot pieces, WOAHONEY, olive oil, cumin, smoked paprika, cinnamon, cayenne, and salt until well coated.
  3. Spread the carrot mixture in a single layer on the prepared baking sheet.
  4. Roast for 20 minutes, then remove from oven and toss carrots to ensure even cooking. Return to oven and roast for 10-15 more minutes until carrots are tender and glazed.
  5. Transfer roasted carrots to a serving dish and drizzle with any remaining honey glaze from the pan.
  6. Garnish with fresh chopped parsley and sliced almonds.
